SEASONS
"Four
seasons" is a combination of four kinds of spring
roll (Fresh spring roll, net spring roll, and imperial
spring roll, Hoi An spring roll)

Fresh spring roll is made of pork julienne sliced prawn,
'kim chi" and assorted of herb, lettuce which
combine with grind pork meat and spices. All is rolled
in rice paper.

Imperial spring roll is believed a special for Kings. It
is a mixture of grind pork meat, that is marinated with
spices herb, deep fried shallots, Chinese mushroom, salt
and pepper.

Net Spring roll is one kind of spring roll in net (a
home-made rice paper). The ingredient is the same with
imperial spring roll but deep fried shallots instead of
grind calamari.

Hoi An spring roll combines grind pork meat mixed with
seafood, herb, ear mushroom, celery, vermicelli, deep
fried shallot, chicken powder.
Four
kinds of spring roll are symbolized for four seasons of
the year. And we use this dish with green garden salad
and sweet & hot sauce.
It
is said that, once you are in Hoi An but you haven't
tried "Four seasons", it means from the bottom
of your heart, you haven't understood the culture of
Hoi An
ancient town well enough. |
